Tofu and Eggs with Brie and Spinach

Ingredients
- 6 eggs
- 1 c milk
- 1 tsp Olive oil
- 7 oz firm tofu (1/2 container)
- 3 oz brie (about 1/2 cup)
- 1 large tomato, chopped
- 1 c fresh spinach, chopped
- 1 c fresh basil, chopped (optional)

Instructions
in a small bowl, mix together the eggs and milk. warm a large pan over medium heat. add the oil, then the egg mixture. crumble first the tofu, and then the brie (as best you can 'crumble' brie), over the egg mixture. let cook until the eggs are nearly done. add the tomato and basil. mix over heat for about a minute. serve.

Yes, tofu is evil!
But this isn't my recipe.
Shaun is right, it's a recipe from the old site. I still have a few hundred to move over and every once in a while I do a few.
And if y'all wanna eat tofu, go for it. You're welcome to my allotment.
