High Fiber Christmas

Am I the only one who dreads the whole menu planning experience? Keeping that delicate balance of healthy and cost effective has always been a source of problems for me. Why is it that all the cheap foods are horribly fatting? Nothing would make me happier than buying fresh organic produce, but oy... Have you SEEN the price of organic avacados? I'm in search of healthy, cost effective meals that a husband with the tastebuds of a three year old would appreciate. Is it a hopeless cause? Am I destined to eat hamburger helper and EasyMac? Hints, tips, tricks, and general advice is always appreciated. I've yet to delve into the mystery that is my brand new crockpot, so I KNOW there is a secret world of happiness in slow cooking. This is a cry for assistance from the newbie, and I know you brilliant ladies (and gentlemen if there are any around here) are up for the challenge. Go forth and advise!--read more

Too easy to cook for...

Although my soon-to-be-fiancé and I see eye-to-eye on most things, there's on small issue that I would like to bounce off the rest of you here, and see what your thoughts on the matter are.

He doesn't eat much at all - perhaps two meals a day, three if he remembers. When he does eat, his meals consist of plain rice or pasta, and nothing else. For breakfast he will occasionally have toast with butter, and he will eat scrambled eggs if he takes the time to make them, but overall, this diet seems to satsify him. He's been doing this for years, since before I met him, and I don't forsee it changing readily... While I realize that this would make it ridiculously easy to cook meals for him and then just grab whatever I wanted, I would rather find a way to persuade him to broaden his horizons, or at least eat some fruits and vegetables every once in a while. --read more
