Ingredients

4Tsugar, heaping
1⁄2lbbutter (2 sticks), softened
1Tmilk
2cflour
1⁄2cchopped walnuts
  Powdered sugar

Instructions

Cream sugar and butter in medium mixing bowl. Add milk, then gradually mix in 2 cups of flour. Add walnuts. Mix well, then roll into balls and place on cookie sheet. Bake at 350 degrees for about 10 minutes, or until bottom of cookies are medium brown. Cool completely then roll in powdered sugar.

Description

These are adapted to use light (white) spelt flour and coconut oil instead of canola oil, because canola oil is evil. ;) We also use chunky, not smooth, peanut butter.

Ingredients

2 1⁄2clight (white) spelt flour
1 1⁄4tbaking powder
1⁄2tbaking soda
1⁄4tsalt
1⁄4cCoconut oil
2⁄3cchunky natural peanut butter
12Tunsalted butter, softened
1⁄3cPowdered sugar
1clight brown sugar, packed
1 large egg
1 egg yolk
2 1⁄2tvanilla

Instructions

Preheat the oven to 350°F. Stir together all the dry ingredients. In the main bowl, beat together the coconut oil, peanut butter, butter and sugars until very fluffy and combined. Add the egg, egg yolk and vanilla and beat until blended. Stir the flour mixture into the peanut butter mixture a bit at a time and keep beating until it's smooth. The dough is soft. Let it stand for at least five minutes; it keeps well in the fridge if you want to make the dough the night before. Roll small balls of dough between your hands, about 1" in diameter. Place them on a cookie sheet about 2" apart and flatten them with the tines of a fork in the crosshatch pattern common to all good peanut butter cookies. :) Bake 9-12 minutes, until the edges are brown. Cool on the pan on a rack until the cookies are firm enough to transfer to a rack.

Notes

These keep very well, but you won't ever find out how long; they are FABULOUS!

These glazed cookies are best made with the fragrant Meyer lemons, available at better grocery stores from mid-November through early spring. You will need 2 to 3 medium-sized lemons. You can use regular lemons, but the effect won't be as spectacular. Be sure to use unsprayed fruit.

Ingredients

1cunsalted butter, softened (2 sticks)

15ozwhole milk ricotta cheese
1⁄2tlemon extract, or 1 tsp. lemon baking oil
3Tfresh Meyer lemon zest
1TMeyer lemon juice
2 1⁄2call-purpose flour

Instructions

Meyer Lemon Ricotta CookiesPreheat oven to 350∞F and line baking sheets with parchment paper. Combine butter and sugar in bowl; cream together until light and fluffy. Add eggs, Ricotta, lemon extract (or baking oil), zest and juice; blend well. Add 1 cup flour, baking powder and salt; blend to combine. Add remaining flour in two parts, blending to combine between each, until a dough forms. Drop by rounded Tbsp. 2 in. apart onto baking sheets. Bake until cookie edges are very light golden, about 12 to 15 min. Let cookies rest on baking sheet for a few min. and transfer to wire cooling rack. While cookies cool, prepare glaze: Glaze ingredients: 3 cups confectionersí sugar 3 to 4 Tbsp. Meyer lemon juice Decorating sugar, silver dragees (small silver balls), optional Cream together butter and sugar. Continue to mix, gradually adding juice until desired consistency. Decorate cooled cookies adding dragees or decorating sugar, if desired, before icing sets.

Thoroughly mix together (with a electric mixer, preferrably) butter and sugar (adding the sugar gradually). Add the almond extract. Sift together the flour and baking powder and gradually add to butter mixture. Put the mixture in a cookie press and press out the cookies.... Bake 10-12 min in a 375 degree oven.

A fun "sandwich" cookie on a lollipop or popsicle stick.

Ingredients

1packageRitz-type crackers
1 jar peanut butter
1 large bar chocolate, white or milk, chopped
24 popsicle or lollipop sticks
  sprinkles or icing to decorate

Instructions

Make "peanut butter sandwiches" with the crackers and peanut butter. Place a popsicle stick in between the crackers to create a "cookie pop." Melt chocolate in top of double boiler or in microwave. Dip cookie into chocolate and lay on wax paper to set. Sprinkle while melted or decorate with icing after cooled. These are great for Christmas, too.

Instructions

Preheat oven to 350. Blend shortening and Bsugar together. Add dry ingredients. Add milk till dough forms, you may need more than 1/2 C. Spread 1/2 of dough in 13X9 pan. Puree dates and water in blender. Spread date mixture on dough. Pinch off pieces of the other half of the dough and drop it all over the top of date mixture. Flatten a bit with palm. Bake for 20 min, or til top is golden. Cut into bars. Yummmmmm.

Notes

I LOVE these cookies. Sometimes we make them "oreo" style, and roll the dough out and cut it, bake as individual cookies, and boil that pureed dates for a bit, and use it as the filling. The whole grains and dates are just so wholesome and taste so good!! My family snarfs them, and they are always a hit at parties, even among those who don't do the "whole grain thing".

Instructions

In a medium bowl, combine butter and sugar; cream together until light and fluffy. Beat in egg yolks. Add flour, cardamom, salt and zest; blend until dough is evenly mixed. Adjust cardamom to taste. Divide dough in four balls on sheets of plastic wrap, and flatten each into a disk. Wrap tightly, and chill for at least 1 hr. or overnight. Preheat oven to 350°F and line baking sheets with parchment paper or butter them. Take 1 ball of dough from refrigerator. (Keep remaining dough chilled.) On a lightly floured surface with a lightly floured rolling pin, roll dough out to 1/8- to 1/4-in. thickness. Cut into shapes and place on prepared baking sheets. Bake until bottoms just begin to brown, 8 to 10 min. Transfer to wire rack to cool completely. Continue to roll, cut and bake remaining dough. For the icing, combine butter, sugar, salt and vanilla in a mixing bowl. Beat at low speed, gradually adding juice to reach desired consistency. Decorate completely cooled cookies as desired.

Notes

*Use large, granular-type cane sugars; in particular, large crystal Turbinado sugar or Demerara. **Cardamom can be found in the spice section of most grocery stores.

Instructions

Preheat your oven to 160 degrees Celcius. Mix the first four ingredients in a bowl. Put the syrup and butter in a pan over low heat and melt completely. Mix the hot water with the bicarbonate of soda, add to the sugar/fat mixture and stand back. Now pour this into the dry ingredients and mix well. Place tablespoons of the mixture onto baking trays, and flatten each biscuit to about 2.5 - 3 inches in diameter. Bake for 8-10 minutes or until a deep brown. Take them out while they're still doughy, or by the time they crisp up they'll be charred discs. Cool on the baking trays for 5 minutes, and then cool completely on a wire rack.

Notes

Hello. We may have a problem here. I'm using Australian metric measurements. I don't have a converter handy, I'm terribly sorry, but I know American cups are slightly smaller than the ones from Oz.

Put walnut-size balls of the mixture on baking sheets - well spaced because they spread - and bake for about 15mins. Don't just leave them to go cold - eat some fresh and warm!!! Store in an airtight container.

Instructions

Take a large bowl, sample the Cuervo to be sure it is of the highest quality, pour one level cup and drink. Turn on the electric mixer... beat one cup of butter in a large bowl. Add one teaspoon of sugar. Beat again. At this point it's best to make sure the Cuervo is still OK, try another cup, just in case. Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit. Pick the frigging fruit off floor...Mix on the turner. If the fried druit gets stuck in the etrrs, just pry it loose with a drewscriver. Sample the Cuervo to check for tonsisticity. Next, sift two cups of salt, or something. Check the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add one table. Add a schpoon of sugar, or somefink... whatever you can find. Grease the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window, FINISH the Cose Juervo and make sure to put the stove in the dishwasher.

123 Peanut Butter Cookies

(Only 3 ingredients! Super fast & DEEEELICIOUS!)

1 cup peanut butter (smooth OR chunky)
1 cup granulated sugar
1 egg

Mix 3 ingredients together. Roll into small balls, roll balls in granulated sugar. Place about 2 inches apart on ungreased cookie sheet. Use fork to flatten (also makes the "grid" marks).

Bake at 350 for aprox 10 minutes.

**NOTE** 10 min. is estimated time. Watch them CLOSELY! They burn very easily. Take out when they are golden brown.

These are so delicious they practically melt in your mouth!

Instructions

Dried lavender may be found in health food stores or natural food markets. Be sure to buy the type that is processed as a food product and not for crafts to avoid poisons and preservatives. Grind lavender and sugar into powder in food processor. Cream butter, add sugar and lavender then beaten eggs. Add vanilla. Into one cup flour sift baking soda and baking powder. Add this sugar mixture. Alternate remaining flour with milk to make soft dough. Drop by teaspoon. Bake at 350Ëš for 8-10 minutes.
