Rival 1 1/2 Qt. Crockpot

An amazingly useful size

Crockpots are usually huge things. I can fit an entire chicken in my big one. But the pot I use almost every day? My Rival Crock-ette, which isn't made any more; I've had it almost since the day I left home 25-plus years ago.

This is a well-regarded replacement for the Crock-ette. We use our mini-crockpot as a porridge pot, cooking porridge overnight in it almost every day. We've also used it at buffets for things like wienies in barbecue sauce or hot dips of one kind or another. So while a teeny crockpot is useful if you're cooking for just one or two, it also offers a host of uses for families as well. It's one of the few electric kitchen appliances I wouldn't like to do without.

Yup, he found one of these and got it for us. What a sweetheart! (DH, that is!) It's adorable and little and is so small I can leave it on the counter all the time, I don't have to find a place to store it away when I'm not using it. Can't wait to make porridge in it...for which you're supposed to butter the sides and bottom before adding the grain and water, which I found interesting. The crock fits nicely in the dishwasher and it comes with a bunch of good looking recipes. Yum.

Eggs & the crock pot

I have one of the small crock pots, just right for one person. I even use it as a double boiler sometims, when I want to melt something, but not too hot.I only have low and high.

If I'm going to use it as a double boiler, and I need some hard boiled eggs, I will put about 4 eggs in it, turn it on high. I give the eggs 10-15mins. as they don't actually boil, but they do cook. When I know i'm going to make hard boiled eggs, I also put a bowl of water in the freezer. I usually let it stay in the freezer for 20-30mins. It's even okay if there is a little skim of ice around the edges. As soon as I take the eggs out of the crock pot, I put them into the ice cold water.

I let the eggs sit in the ice cold water, in the freezer for maybe 5-10mins. Putting hot eggs in ice cold water, keeps the eggs from getting that terrible green color around the yolks. When I go to make deviled eggs, or egg salad, or whatever, the yolks are a bright yellow color. It is the slow cooling that makes the yolks get that green color on the outside of the yolks.

Try it, the water won't freeze too much, and the eggs certainly won't freeze. Just don't forget the eggs are in the freezer.

I've never done that and have never had trouble. But then, I don't have this particular crock so what do I know... Smiling
