    <directions>1 package Barilla dry four cheese tortellini<br />
2 medium zucchini, sliced into thin rounds<br />
2 medium yellow summer squash, sliced into thin rounds<br />
3 medium tomatoes, diced<br />
1 small onion, diced<br />
2 cups sliced mushrooms<br />
2 cloves garlic, pressed<br />
8 teaspoons olive oil<br />
1 cup shredded parmesan cheese<br />
fresh ground black pepper<br />

Cook the tortellini according to package directions. While it is cooking, preheat a large frying pan to very hot. Working in batches, add one teaspoon oil and 1/8 of the veggies at a time and fry until tender. When all veggies are cooked, saute onion and garlic for about 1 minute. Add veggies and stir to coat, add parmesan. Drain tortellini and add to veggie mix. Toss well and serve.</directions>
