    <directions>Cook the potatoes however you like to--microwave, baked, steamed, boiled. Cool. Chunk up the potatoes into bite sizes if you haven't in cooking them. In a bowl big enough to toss things in, combine the potatoes and onions with the mustard, the oregano and enough oil and vinegar to moisten things. Taste, season with salt and pepper, taste again, adjust the mustard, oregano, oil, vinegar, salt and pepper to your liking. Chill. Eat. mmmm...</directions>
