OIL.....3 TBSP

cayyene.....1/4 tsp
<br>
salt.......1 tsp
<br>
turmeric.....1/2 tsp

corriader powder.....1/4 tsp

Garam masalah....1/4 ts

scallions.....,2(chopped)
<br>
Mint leaves......1/8 cup.chopped

tomatoes.....2
<br>
onion seeds.....1tsp(optional)

Heat oil.Add  potates(sliced in rounds or cut in small cubes). and fry one mint.Now add cayenne, salt ,  cumin, corriender and turmeric and stir till everything is mixed with oil.

Add chopped tomatoes and about a cup of water.Cook covered on high heat till all water is absorbed, potatoes are cooked through and oil surfaces.Add onion seeds now and stir once without breaking the potaoes(use a metal frying spoon).

Sprinkle garam masalah,fresh mint ,corriender and scallions.

This we usually serve as a side dish or along another vegetable dish and yogurt raita(spicy).We eat it with traditional chapatis,parathas(flat fried bread,or purris...deep fried flat bread made of flour)or pitta
