  • 6 eggs
  • 1c milk
  • 1tsp Olive oil
  • 7oz firm tofu (1/2 container)
  • 3oz brie (about 1/2 cup)
  • 1 large tomato, chopped
  • 1c fresh spinach, chopped
  • 1c fresh basil, chopped (optional)

Instructions

in a small bowl, mix together the eggs and milk. warm a large pan over medium heat. add the oil, then the egg mixture. crumble first the tofu, and then the brie (as best you can 'crumble' brie), over the egg mixture. let cook until the eggs are nearly done. add the tomato and basil. mix over heat for about a minute. serve.
