Ingredients

  • 1c rolled oats
  • 3c dessicated coconut
  • 1c wholemeal plain flour
  • 2c raw sugar
  • 2T golden syrup (replace one spoon with molasses for laxative effect)
  • 125g unsalted butter (preferably from a happy cow)
  • 1t bicarbonate of soda
  • 2T hot water
  • 1c rolled oats
  • 3c dessicated coconut

  • 125g unsalted butter (preferably from a happy cow)
  • 1t bicarbonate of soda
  • 2T hot water

Instructions

Preheat your oven to 160 degrees Celcius. Mix the first four ingredients in a bowl. Put the syrup and butter in a pan over low heat and melt completely. Mix the hot water with the bicarbonate of soda, add to the sugar/fat mixture and stand back.

Now pour this into the dry ingredients and mix well. Place tablespoons of the mixture onto baking trays, and flatten each biscuit to about 2.5 - 3 inches in diameter. Bake for 8-10 minutes or until a deep brown. Take them out while they're still doughy, or by the time they crisp up they'll be charred discs. Cool on the baking trays for 5 minutes, and then cool completely on a wire rack.

Hello. We may have a problem here. I'm using Australian metric measurements. I don't have a converter handy, I'm terribly sorry, but I know American cups are slightly smaller than the ones from Oz.
