- 2 c pumpkin or other winter squash (such as butternut), raw, shredded fine and drained hard
- 1 grated onion (optional)
- 1 egg
- 1 c self-rising flour

Instructions
Drain the squash again, until it's really dry. Mix together all ingredients. Fry in hot oil, a couple of minutes per side.
