Potato Curry

Description
A quick and tasty vegetarian potato curry.
Ingredients
- 1 lb potatoes
- 1 t onion powder
- 1 t garlic powder
- 1 t ginger powder
- 1 t turmeric powder
- 1 T tomato paste
- 2 T salsa
- 12 cardamom pods
- 12 cloves
- 1 t salt
- 1 T oil
Instructions
Prick the potatoes with a fork, and cook in the microwave for four minutes, two minutes on each side. Cool the potatoes in cold water, peel and cut in halves. Heat oil in a saucepan and fry the cinnamon, cardamom and cloves for a minute followed the potatoes, onion, ginger and garlic powders for five minutes. Next, add the half a cup of lukewarm water, tomato paste or salsa, and salt. Cover with a lid and cook on medium high heat for another five minutes. Garnish with cilantro/coriander leaves if desired.
