RE: Bread Making

Ok all you homemakers ...
What is your favorite yeast bread recipe?
Do you make bread for the family?
Here is one of my favorites...

Oat Bran Bread
-------------------------------------------------------
4 1/2 rounded teaspoons dry yeast
2 teaspoons sugar
1/2 cup warm water (not too hot, it might kill the yeast 110 degrees)
--------------------------------------------------------
2/3 cup boiling water
4 Tablespoons canola oil (or any high quality vegetable oil)
2/3 cup sugar
2 teaspoons salt
--------------------------------------------------------
2/3 cup cold water
2/3 cup oat bran
--------------------------------------------------------
2 cups whole wheat flour (you can use white whole wheat flour)
3 1/2 cups white bread flour (Can use all purpose) Note: Do not add all the flour at once, start with only 2 3/4 cups to 3 cups of white flour and slowly add more only if you have to..in order to get the right stiffness to the dough, i.e. not sticky Sometimes it depends on the weather believe it or not!
---------------------------------------------------------
In a small mixing bowl, dissolve yeast in 2 teaspoons of sugar and warm water, set aside, till the mixture gets "foamy like" This is called proofing your yeast. If it does not get foamy on the top after 15 minutes or so, your yeast might be too old.
In another bowl combine boiling water, oil, sugar, and salt. Stir until the sugar is dissolved
Stir in cold water and bran.
----------------------------------------------------------------------------------
Combine yeast mixture and Bran mixture together and slowly add flours (Whole wheat flour first) into the combined mixture, stirring hard with a "good old fashioned wooden spoon!"
Turn mixture onto your kneading board or counter top and keep kneading and adding flour until the dough becomes not too sticky. The dough will become smooth, but not dry. Be careful not to add too much of the flour.
Grease a large mixing bowl and when the dough is smooth and elastic put the dough in the greased bowl, cover with a clean dish towel (not the terry kind) and place in a warm place let rise till doubled.
After the dough has risen, punch the dough down and knead just a bit, but not too long
Divide the dough into two equal parts and shape into loaves. Place in greased loaf pans and let rise till doubled. Bake at 350 for 35 min or so. Top will be golden brown and loaves will sound hollow when tapped on bottom. Let cool on wire rack...Slice when totally cool...16 slices per loaf
Hint..refridgerate wrapped loaves when they are cool: overnight Then slice ...all homemade breads will slice easier cold
