I had a version of this at a friends house recently. She is on a low-carb diet, and this is not something I would make regularly, but as a special treat, it is phenomenal!
1 thick boneless rib-eye steak per person
1 cup dark molasses
garlic powder, to taste
salt
freshly ground black pepper, to taste
3 cups hickory or applewood chips, soaked for at least 1 hour
Sprinkle both sides of the steaks with the garlic powder and pepper. Press into the meat a bit and let sit for at least ten minutes.
Meanwhile, preheat the grill to very hot if gas. If charcoal, get a good coating of ash first. Spread the soaked chips on the coals. Sprinkle the steaks with a little salt and put on the grill. Immediately turn the grill down to low (if gas). Turn the steaks after 5 minutes and brush with molasses. Cook 3 minutes on second side, turn, and brush with molasses. Remove from grill and let sit for at least 5 minutes.
My friend served this with a salad of romaine lettuce chopped into small pieces topped with chopped tomatoes, red onions, toasted pecans,and crumbled blue cheese. It was dressed with a balsamic vinegarette. YUM!
