Boil 1 whole chicken, debone when done and pull apart or chop up chicken. Save all the chicken juice for later.
Make the cornbread (use 4 packs of cornbread mix)
When done, let cool.
Chop up onions, celery, hard boiled eggs.
Break apart cornbread finely into large container. I have to use a big plastic cake top lid.
Add all ingredients, including chicken juice, salt and pepper. Stir until thoroughly mixed. You want it to have a lot of liquid, so you may need to add chicken broth, which also adds more flavor.
Put into a large cooking pan (this makes a lot)and bake at 350 degrees. Stir mixture occassionally. How long depends on how dry you want the dressing to be. I usually cook mine for about 2 hours.
IT'S GREAT! Guess who gets picked to fix the dressing every Thanksgiving and Christmas.
P.S. If you have more dressing than you can cook before you bake it, you can put in freezer and save for another day. We eat it for regular meals.
