This is a slaw I made up recently; my family ate the entire bowl in a sitting. Makes enough for 6-8, depending on how much they like it. The dressing is also really good on fruit salad.
Slaw:
1/4 green cabbage, shredded
1 large carrot, roughly grated
2 large stalks celery, thinly sliced
Handful of raisins (I used a mix of dried cherries and raisins)
Handful of roasted, salted almonds, roughly chopped
3 chunks of candied ginger, roughly chopped
Dressing:
1 cup plain low-fat yogurt (fat free or full fat are okay, too)
1/2 tsp ground cinnamon, or to taste
2 tsp balsamic vinegar
Honey to taste--start with a tablespoon and add more if you want to
In a large bowl, toss the slaw ingredients.
In a smaller (glass, just in case) bowl, mix the dressing ingredients. If the honey gives you trouble (which can happen if the yogurt's cold), put the bowl in the microwave and zap it for 10-15 seconds. Adjust the flavors in the dressing.
When you've got it where you like it, start adding it a spoon at a time to the slaw. When it's as creamy as you want it (some people like it a little dry, like me--some people like it really wet), serve.
