2 cups white flour
2 cups whole wheat flour
1/2 cup shortening
1 1/2 cups sugar
2 teaspoons baking powder
Mix dry ingrdients in a large bowl. Cut in the shortning until mix has a small crumb. Split in half and add dried fruit and other flavorings. Bag halves seperately in a zip-lock. When ready to bake, add 1 cup of milk and one beaten egg to the mix. Makes one dozen good sized muffins.
Add ins:
dried fruit
citrus zest
nuts and/or seeds
We have made orange/cranberry, lemon/blueberry, lemon poppyseed, triple berry, sunflower/apricot so far and all have been excellent! Next we are going to try a tropical mix with pineapple and coconut.
