Pecan Pie Mini Muffins

If made just right these are like little bite size pecan pies!!!

1 cup chopped pecans

1 cup firmly packed brown sugar

1/2 cup all purpose flour

2 large eggs

1/2 cup melted butter or margarine

COmbine first 3 ingredients in a large bowl. Make a well in the center. In small bowl beat eggs until foamy and stir in melted butter. Add to well in dry ingredients. Stir until just moistened. Place in FOIL mini baking cups that have been sprayed with Pam. Fill 2/3 full and bake at 350 degrees for about 10-15 min or until sides are brown and kinda crusty. Remove immediately from muffin pan and let cool.

I made my first batch with paper cups and they stuck very badly! So I really recommend using foil cups sprayed with Pam!
