Instructions
In a very large bowl combine:
1 box bowtie or shell pasta, cooked, rinsed with cold water and drained.
1 box frozen broccoli florets, thawed and drained
1 can dark red kidney beans, drained and rinsed
1 cup shredded carrot
1 cup diced celery
1 small sweet onion, diced
1 box frozen baby peas, thawed and drained
toss gently
In a small bowl, combine:
1 cup mayonaise
juice of one lemon (or more, to taste)
1 teaspoon sugar
big dash ground black pepper
1 envelope Ranch dressing mix
Pour dressing over pasta and veggies, mix gently and refrigerate for 1 hour to blend flavors. My kids will eat this as a main dish for lunch or dinner, and will also munch on the leftovers as a snack. They have never even mentioned the abundance of veggies in it.
