Instructions
INGREDIENTS:
8 cloves of garlic - chopped fine
1 small onion - chopped fine
1/2 cup pure olive oil
red and/or green pepper (1/2 chopped, other half sliced
1 small bag brocoli florets
1 small can Hunts whole tomatoes - cut in pieces
1 can Swanson seasoned Italian chicken broth or regular chicken broth
1/4 cup red wine (not cooking wine)
1 small can olives - sliced
1 pound box penna pasta
frozen small meatballs (or make your own - recipe follows)
Saute chopped garlic, onions, and chopped peppers in olive oil till tender (do not burn). Add can of chicken broth, tomatoes and only 1/2 of the juice, wine, and sliced peppers and one can of water. Stir and simmer for 1 hour.
Cook penna pasta (al dente) see box for directions.
when pasta almost cooked. add the olives, brocoli and meatballs to sauce mixture to heat through.
Drain and rinse pasta. Add to sauce and blend. Serve hot.
NOTE: THIS IS EVEN BETTER THE NEXT DAY!
MEATBALLS:
note: You can find frozen little meatballs at any Italian Import store. If not... make your own. (Can make ahead and freeze).
1 pound ground chuck or ground beef
1 clove garlic - chopped fine
1 handful of parmesean cheese - grated
1 handful of seasoned breadcrumbs
1 egg
salt and pepper to taste
Mix well and roll into small balls. Put on cookie sheet and bake at 350 degrees for about 15 minutes or until baked throughly. Add to sauce mix as listed above.
Note: this will make quite a few meatballs. Save half for the next time
