2# zucchini and yellow squash, washed and sliced 1/4" thick


large onion chopped


cup carrots grated


can cream of chicken soup (or cream of mushroom for vegetarian version)


1/2 Cup plain low-fat yogurt


8 oz pkg (or half of a 16 oz pkg) herbed stuffing mix


(like Pepperidge Farm)


1 stick of butter



1. Steam squash and onion until just tender. Do not overcook. Let cool.


2. Mix soup, yogurt and carrots together in a large bowl.


3. Add in squash mixture


4. Melt butter and mix with stuffing mix.


5. Spread half of stuffing in bottom of a rectangular baking dish. Spread squash mixture on top. Sprinkle remaining half of stuffing mix on top of that.


6. Bake in preheated 350 degree oven for 35-45 minutes or until bubbling.
