Jewish Apple Cake

Description
A kosher cake--no dairy.
Ingredients
- 3 t baking powder
- 1 1⁄2 t vanilla
- 1⁄2 t salt
- 1 orange, juiced
- 6 Apples
- 2 t cinnamon
- 2 1⁄2 c sugar plus 4 tsp.
- 1 c Crisco oil
- 3 c sifted flour
- 4 eggs
Instructions
Pre-heat oven to 350 degrees. Peel, slice & chip the apples; sprinkle with cinnamon & 4 tsp. sugar; set aside until batter is ready. Grease and flour a 10" tube pan. Mix all ingredients (except apples) together and beat well. Batter will be thick. Pour half the batter in the pan, layer 2/3's of the apples and spread over batter. Pour remaining batter on top, then layer the rest of the apples. Bake for approximately 90 minutes.
Notes
I have found oftentimes the top apples will burn. To remedy, after 60 minutes I put an inverted round cake pan overthe top for the last 30 mintes. Came out perfectly!
