Last nite:
Grilled Pork Tenderloin
Spinach Salad
Mediterranean Couscous
Broccoli
Tonite:
Grilled Chicken Breast
Baked Potatoes with Sour Cream/Chives
Steamed Green beans
Asian Cole Slaw
These were both really yummy meals. Our first two times to grill this spring - I love grilling. We used similar marinades both nights - soy, garlic, sesame oil, ginger, vinegar and what have you.

Sausages
We had sausages and mashed potatoes, with roasted carrots and parsnips, and lots of gravy. Yum
Tonite was less impressive,
Tonite was less impressive, but we had a 7-year-old girl, friend of DD's, very picky eater to feed!

I'll join in tonight. We had Swiss Steak in the crock pot and Peach Cobbler (both Paula Deen recipes from her show today). Yummy, Ya'll!
Butternut squash
I halved a butternut squash, drizzled it with olive oil, ground some pepper and sprinkled some sea salt over it, and roasted it for 40 minutes or so. We had it with sausages and some leftover grated carrot.
It was the first time I've done butternut squash like that, usually I cut it in small pieces and roast it with sweet potatoes and carrot.

I have a new garlic roaster
..a darling little terra cotta plate and dome designed just for roasting garlic bulbs! It's on my ToDo list for tomorrow...along with making a loaf of lovely fresh WW-herb bread to eat with it!

It did occur to me to cut some up and put it in the hollow of the squash, though in the event I forgot!
I've never roasted whole garlic. Do you just eat it like that? Isn't it a bit overpowering?

applesauce-pecan spice cake with cinnamon-cream cheese frosting. I piped the frosing in swirls and garnished with a pecan nut half. A dozen full size and 18 minis on the tray.

We have a great cafe here with very tempting "high fashion" cupcakes, many named after celebrities. If they weren't so pricey I'd buy several dozen for DDs upcoming 1st communion party.
Cooks Country claims to have a great recipe for black bottom cupcakes, which I may try for the event.
Dinner tonight: good ol quesadillas!
Last night: Tortillini, spinach, and white bean soup with wheat rolls
I'm on the make-it-in-a-minute tip these days. I long to make a meatloaf or something!

not at all
The garlic gets mellow and sweet. Cut the top off a head of it, roast it, and then squeeze the soft-as-butter cloves out onto bread. deelish.
