Best Cheesecake EVER

This recipe from The Joy of Baking is the best cheesecake I've ever made, hands down. Rich, creamy, easy, and cute--since I don't have a springform pan the individual cakes are fine by me.

I made these in little foil star shaped cups for DD's birthday party and they were a big hit. No one wanted the cunning little celery rosettes or finger sandwiches, (was a tea party theme) just the star-shaped cheesecake cupcakes. Shoulda known.

I didn't have parchment paper so I used wax. If you use wax paper, remove it after cooling and before you put them in the fridge. If you let it sit overnight in the fridge with them in they stick to the cheescake and it's a pain. But it does work to get the whole cheesecake cupcake out with the crust still attached.

Ingenious.
