If I had a chicken . . .

"I'd eat chicken in the mo-or-ning . . ."

Now, if you had about 3 cups of shredded cooked chicken breast, what would be the best and most fabulous thing you could think of to do with it?

You see I am a total poultry novice. I just had to thaw a giant package of bone-in breasts to get it out of the freezer. We grilled a bunch and I poached the rest in the crock pot.

Now what?!

1) Heat up some chicken broth, chop up some veg and put it in, throw in some chicken meat, et voila, chicken shoup!

2) Add them to stacked enchiladas.

3) Use as pizza topping.

4) Use as a burrito filling.

Chicken Salad!

...a summertime staple around here!

Add whatever you like/have...some of my favorites are apples, grapes, nuts/seeds, sweet pickle relish, fresh green onions....mix with a bit of mayo/salad dressing (aka Miracle Whip) and a splash of lemon juice.

Serve on a bed of greens, in ripe tomatoes, in phylo dough cups (pretty!) on croissants/rolls/buns, in a wrap, etc.

chicken salad wraps! It's our new lunch favourite here - just me and DH.

chicken curry would be a good disguise, or a blend of the two with coronation chicken (google it - it's a salad using curry powder, and very English).

stir fries are another good place to hide any kind of protein without being too warm in the summer.

I also put another chicken soup into the recipe box some time back whih is very tasty - no liquidiser required, but you'd want to have some chicken stock.

chop it up, mix with miracle whip and some seasoning salt, spread between two slices of bread, poof, chicken sandwich. We also do this with turkey leftovers after thanksgiving.

My mother made the best pot pie with leftover turkey or chicken, too. She used the recipe in the Better Homes & Gardens cookbook.

My other choices would be chicken enchiladas or on top of a salad of greens, like chicken ceasar salad.

Yummy Chicken Casserole!!

My mom mixes up a box of that instant stuffing, uses is as a "crust", lines a 9 x 13 pan with it, fills it with the chopped chicken mixed with 1 can cream of chicken soup and 8 oz. sour cream. Top with drained, cooked green beans, and something crunchy (we like the canned fried onions, but sometimes she uses chips, or corn flakes). Bake til bubbly (usually 20 min @ 350 degrees F. YUM!!

get some tortillas. fry them. grab some lettuce. tomato. sharp cheddar and some sour cream/salsa and make some chicken tostadas.
