Going "American" for the 4th!we're having pizza!
Blessings, ![]() Pizza sounds great! But I am very proud of my contribution to our picnic later today: Sea Slaw wraps (also known as Valley of the Sea: Krab and shredded cabbage with ranch dressing) Also, strawberries, cherries, Raspberries Izzes and Blueberry Izzes, some candied nuts for pre-meal, pre-exploring snack. My friend is bringing another salad and some bars for dessert. Wow, Shaun! You guys sure do "picnic" more elegantly than we do! We had a great time at my mom and dad's...(I think I've told you all before that we go there on the 4th because we can see fireworks from at least 5 different cities/communities from their balcony!) We had just had a big family dinner on Sunday with some visiting relatives from FL, so last night was lazy and relaxed. The DDS and I are hoping to spend the afternoon at the pool so I've thrown a chicken in the crock-pot today. So..... Crock-pot chicken and either Blessings, What's for dinner tonight-July 6We took the kids to a nice park and had a pizza and homemade fruit pizza for dessert. The Grandparents and two Aunts and a few more of my nieces and nephews attended as well. A nice relaxing evening ![]() Overdid itI guess I worked too hard yesterday, because dinnertime hit today and all I could think of was a good nap! Luckily, we had leftover sea slaw, leftover couscous salad, some raw sugar snap peas, and I opened some sausages that we were supposed to take to a picnic tomorrow (DD3 hates the sea slaw, and DH had eaten one of my leftovers!). Which reminds me that somehow I am supposed to be making lentil tabbouli for tomorrow. Hmmm -- will the lure of the deli counter be too strong? The day is pretty packed up until we leave. ummm...DH fancied something a bit spicy today (keep the lewd comments to yourselves please) and I fancied being lazy with rice, so we had a jar of curry sauce, chicken and rice. Very simple, yet almost food-like! Kerri. ![]() Another lazy oneI'll be baking some frozen stuffed rigatoni with -- oh dear -- as I type I just realized that I might not even have rigatoni! OK, I'll be having something with the tomato sauce I just defrosted. Might be turkey meatballs and pasta. Might be rigatoni. Who knows -- might be 12-grain bread! And tomorrow, the DDs will be at a friend's -- starting a new babysitting switcheroo each week -- so I think DH and I will have some curried chicken salad. Saturday is dinner party: Penne with chard and ricotta Sunday -- going out for Chinese! ![]() OK Shaun, I understandOK Shaun, I understand everything on your dinner party menu except for the mache. Huh???? Love the idea of lemon curd and blueberries. Please don't tell me you are baking your own angel food cake. We've been getting by here. Last nite was pork tenderloin with apricot preserves and dried onion soup mix with couscous and salad. That is a great, easy sauce for just about any meat. Tonite was a quick dinner b/c DD7 has soccer - frozen pizza, sauteed green beans and carrots, and garlic bread. This weeked is our village's festival, so we will be eating in the park or downtown all weekend. Yay! ![]() Mache is also known asMache is also known as lamb's lettuce. At our Whole Foods I found a "mache mix" with radicchio and something else, so that will have to do. And no, no baking of angel food cake, nor will there be cooking of lemon curd. ![]() OK, not sure if I've hadOK, not sure if I've had that or not, but it sounds good. We've planted some unusual types of lettuce in our garden this year - love it. Glad to hear your dessert will not be homemade, makes me feel better! Angel Food Cake's not hard....with a good mixer and the right flour...I'm a "pound cake" girl, myself, though! Dinner tonight is: grilled chicken Bob (the lizard) is munching on a bit of basil right now, too. She grabs for the fresh basil but turns away from my parsley. Blessings, The slugs ate my lettucesGot up one morning and they'd gone! Same with the purple sprouting broccoli. I am obviously not destined to be a food gardener! Another lazy dinner here - burgers and fries. ![]() Success! Our dinner party was great! DD7 said it was the best day of her life. The friends we introduced had great fun talking to each other. And the food turned out great too. I agree, AF cake would not be that hard to make, but I had plenty on my hands as it was! I figured AF cake would be the best thing to have non-homemade, rather than the entree or sides. We may skip the Chinese and have leftovers tomorrow night -- if they survive lunch! food chaosFriday we went to a kids' judo party, which was buffet sandwiches, sausage rolls and assorted odds and ends. We'd eaten a pile of noodles before we left, just in case, and we were right to. last night was a Mexican restaurant - ribs, platter of appetisers, quesadillas... very tasty! tonight is ... no idea. World Cup final for sure, so probably something simple. We're going grocery shopping a bit later so we'll shop wisely! Kerri. ![]() Lots of SaladIt's very humid here this week, and all we ate last week was junk, so we will be on veggie overload this week! Monday: Tuesday: Wednesday: Thursday: Friday: racking my brains hereSunday we had a form of quesadillas with chicken at about lunchtime. Monday we had rice, fried trout, scallops with broccoli and mushrooms in black bean & garlic sauce. Tonight the kids had chips with chicken cordon bleu (that'd be breaded with cheese and ham inside), DH had dinner at lunchtime and I've spent the whole day feeling queasy so I'm just getting anything down I can so I don't collapse in a soggy heap! we reach the heights and we plumb the depths over here... and still I get people asking curiously, given my background, what kind of food I cook!! Kerri. TuesdayLamb (oh alright then lamb burgers Good luck for DD's surgery, Jo. Hope you feel better soon, Kerri. everyone on a diet??Jo - how did DD's surgery go?? I scanned too quick the last time I reckon, so I missed that bit. DH and I realised that we seem to have eaten nothing but chicken recently. Small wonder my anaemia has been playing up so badly. I've spent the whole week feeling bad but couldn't force a steak down if I wanted to! DH and I had mushrooms on toast with asparagus for dinner on Wednesday (the kids had pizza with their asparagus!) and caesar salad, crispy bacon bits and some other odds and ends for Thursday's dinner - DH is trying to cut his protein because his gout flared up, but more veg gives me trouble, so it's a fun household at the moment. probably our après judo favourite tonight - chicken salad wraps! Kerri. even easierwe're skipping dinner. Had planned to go out, but after we got run off the road by some huge truck on our side, and the swimming pool was closed earlier than we expected (and we checked the website using DH's phone thing) DH totall lost his cool and we drove home in disgust. Nobody has yet shown any interest in food and it's already bedtime for the kids. we're fine btw, but the front offside wheel got mangled and I think I might need a new tyre because the kerb took a chunk out of it and I can see the core! Kerri. and again!not exactly... DH and the kids ended up having 'sausage noodles' last night - that'd be instant noodles, franks, eggs, spinach because there was some around... whatever he could find. I had pâté, cheese, biscuits, grapes and a small glass of rosé. The kids were dead jealous although DD had turned her nose up at cheese and biscuits in favour of sausage noodles. They might be having cheese and biscuits for supper tonight. We ate with my parents at lunchtime - baked chicken thighs and salads. Kerri. sloppy joesWith mashed potatoes or macaroni and cheese. I'd prefer the potatoes and DH would prefer the macaroni; we'll see who wins. Probably me! I'll have to come up with a vegetable also. ![]() Hi Everyone! Wasn't sureHi Everyone! Wasn't sure where to put this, but this seems as good a place as any. I love shopping at Aldi, though I don't go there as much as I used to. I want to get back to going once every 2 weeks or so. It is 5 minutes from my house! Anyway, I stumbled across this website while reading white trash mom - also worth reading. Anyway, this gal has come up with a shopping list and menus for Aldi! Check it out... I want to try it. http://www.momadvice.com/food/aldi_supermarket.aspx Andrea ![]() Me too!I love to shop at Aldi. The prices are so reasonable, and the quality of everything I have tried is really good. I usually go about once a week:) we get it here tooso thanks Andrea. I wonder how much the products we get differ from yours. Kerri. I can answer that one!The products differ exactly as much as the difference between any ordinary UK vs. US supermarket. Raw ingredients such as milk, eggs, coffee, tea, meat, baking ingredients, and produce are pretty similar, allowing for a few climate-specific variations in the produce. (Also it is nearly impossible to find white eggs in British supermarkets in my experience, so you can forget about dying eggs at Easter! They're all brown.) You'll find more dried beans in a US Aldi and probably more organ meats in a UK Aldi. Prepared foods go with local tastes, so you'll find frozen fish and chips and cottage pie and jars of curry sauces in a British Aldi, and frozen fried chicken and pancakes with hash browns and Mexican-type sauces in an American Aldi. Tacos tonightWith rice and refried beans, of course. DD15.9 and friend are going to a Stand meeting at a Pizza place so she'll be eating there. Great link for the Aldi menues....that web-site has recipes for One Month of Slow Cooking too! I just bookmarked it in anticipation of going to work this fall! ![]() That looks great doesn't itThat looks great doesn't it Lenora! I will be pulling mine out too this fall - can't beat it. Last nite: pork tenderloin on the grill, brown rice, and steamed broccoli and carrots tonite: chicken or tilapia on the grill, salad, and whole wheat pasta TuesdayGrilled sweet Italian sausages Blessings, too hot to eat!woiuld you believe it's actually hotter here than it is most of the time in Singapore!?! In wet England!! basically dinner's a self-service meal these days. DD chose not to bother. DH and I had corn on the cob, caesar salad and bits of cold meat. DS joined us for the corn and the meat. Even at 7 1/2 and almost 10 the kids are capable of knowing if they feel like eating and getting something for themselves if they want, and if that fails they know how to ask for help. We're looking forward to thunderstorms and the last day of school tomorrow! Kerri. oh, for thunderstormsWe had thunderstorms forecast for Sunday and Monday but they never materialized. Now the forecast is nothing but heat. I asked DH to wash his car...but he refused because he knows that means it will rain, and he doesn't want his car to be dirty again afterwards. It was apparently hotter in the UK than in Bermuda today. Kerri. Too hot to cook, here, too...although I just took three loaves of Hawaiian bread out of the oven. We're having: my folks are coming for dinner and bringing apple pie so that will round out our meal! Blessings, bring on the thunderstormsI haven't seen the weather forecast but I am hoping for rain, and the sky was a little grey and cloudy earlier this evening. Fingers crossed! Too hot to even think about turing the cooker on, so we had ham rolls with coleslaw and potato salad. For lunch AND dinner! ThunderstormsThey said we are suppose to get thunderstorms here early this morning. We had a bad one on Monday here as well. I know what you mean about cooking. It has been so hot that I just made some homemade subs, chips and cookies for dinner tonight. ![]() What is Hawaiian BreadWhat is Hawaiian Bread Lenora? Just curious. Your meal sounds grand. Our tilapia turned out nice marinated on the grill. It is the Aldi brand, for you Aldi lovers out there = frozen in the bag. What a deal! I would recommend it for a healthy, cheap, and yummy meal (if you like fish). Hawaiian Bread=Yummy!Hawaiian Bread is a sweet egg-yeast batter bread with a touch of pineapple juice, ginger and vanilla! This was the first batch I've ever made and it turned out delicious! The recipe made three cake-pan sized round loaves...enough for dinner, to give one loaf to a friend; and more for french toast in the morning! Dinner turned out lovely. It was the first time I've grilled pineapple which was also delish! I served the apple pie with vanilla ice cream and caramel sauce...it was a bit off my "tropical" theme, but since I didn't have to prepare it (or come up with a better idea) it worked for me! And one the topic of minimizing heat in the house...tomorrow I'm cooking a pork shoulder for BBQ sandwiches in the crock-pot...on the deck! Blessings, ![]() Great Idea!I have some pork I could throw in the crockpot on the deck too. I never thought of that. Thanks! ham and grapesthat seems to be all anyone in our house has eaten in days. Might make us awful parents but the kids haven't been rushing to tell us they're hungry either, and they know where the fridge is if they are. did actually roast a chicken today, and may roast another one on Saturday. They're good in tortila wraps with salad! Kerri. Fish tonight!Tilapia...with what? I have no idea. It gives me something to contemplate while lounging poolside this afternoon! Blessings, need to roast that chicken!wish I could put the oven outside or roast it another way. I really can't think of any hot-weather food. You'd think I'd never experienced heat before! Kerri. DH is out of townI wish we had a patio so I could use a solar oven or a grill! I hate to heat up the kitchen. NO idea what I'm going to make for myself tonight. ![]() Let's see... marinatedLet's see... marinated chicken thighs on the grill OFf to marinate that chicken... roasted that chickenand then went out to a Thai restaurant DH found when he was taking a detour this afternoon - YUMMY! I've missed my favourite Thai restaurant. The chicken can go in wraps, sandwiches, etc... DH isn't around tomorrow so we'll be glad of that chicken. Except I'll have to be the one pulling it to pieces instead of him for a change. we really earned tonight's dinner! Kerri. bbqWe had a barbecue at my parents' this evening. Made a change from leftover party food, which is all we ate yesterday ![]() Lazy dinnerJust haven't felt much like cooking. Tossed together some linguine with zucchini, mozza., parm., and an egg. Added a spinach salad w/ gorgonzola. Nothing says "dinner" like cheese! Bits and piecesHam rolls, cheese and crackers, potato salad, hummus, mixed beans, cucumber sticks and grapes. WednesdayBLT's tonight Blessings, ![]() Stir Frywith chicken, bok choy, mushrooms, snow peas, red and yellow peppers, and onions rice pilaf fresh pineapple chunks possibly takeoutI'm hoping to get DH to pick up some grilled tequila lime chicken from El Pollo Loco. We'll see if he feels like it! found some nice burgerswe found a dozen burgers at an award-winning butcher which were cheaper than a dozen from Asda, and they were lovely. Had them with seasoned potato slices (like fries only flatter!) and baked beans (canned). No time to make my own burgers recently but I can't go from homemade to ordinary frozen, so we have them occasionally when we find nice fresh ones, and these were a real find! Kerri.
