I've got some lovely fleece!
DMIL brought DD some cute little dressing-up shoes from Australia which came stuffed with undyed (but possibly bleached?) fleece. There's a nice amount of it, not sure what weight, but enough so that it feels satisfactory but not overwhelming
What are your crafty ideas for using it? And if I don't want to use it right now, is there a good way of storing it? Or can I just shove it in a plastic bag?

felt it or spin it
Dye it with Kool Aid (or any other unsugared powdered drink mix or food coloring). Then once it's dried, you can fluff it back up and either spin with it or needle felt it--or other felting technique. Tons of fun.

I would use a bag that "breathes"
and store it with cedar or lavendar or something to keep the moths out, of course.
I'm assuming the fleece is nicely combed/carded and ready to play with. If it still looks like it's still "in the lock" you'll have to card it for some of the following crafts.
In addition to the dying, or needle felting that Lynn mentioned, you can use the fluffy stuff for things like wet felting into beads or balls, wool angels, beards and hair of little dolls, or go completely nuts with a felted bar of soap. Wheeee!
