Dandelion Wine

Every Monday, Anhata and I and our kids get together for what I call a half-@ssed Waldorf kindergarten.
The girls go outside, feed the chickens and get the wiggles out, then we come inside, have a fairy tale and circle, do a craft and have a snack. Then they go play for a little longer.
(Of course, the observant among you will note this is *really* an opportunity for Lynn and Hata to talk, knit and drink coffee, but hey.)
This week's craft was dandelion gathering for wine, which, while alcoholic, is really more for the medicinal value that such a tonic can provide in winter. We gathered so many dandelions our fingers were yellow. In a couple of days we'll be bottling it up to sit until winter solstice, at which time it will be ready to drink--right when the body needs the benefits of spring dandelions the most.
As it happened, today my wonderful herbal teacher pointed out this terrific article about homeschooling and herbal studies. I think we may be making dandelion sugar cookies today!

The question is, can you use the dandelion wine in place of the white wine in Jo's spaghetti bolognese recipe?
