Monday!Hectic afternoon and evening here. Oven-fried chicken crickets and sweet peas (Bob!) Blessings, MondayChicken fajitas. I'm not grocery shopping this week, as funds are low, but I have quite a lot of stuff on hand so it shouldn't be a problem. It just depends how tempted I get by those items that are nice to have, but not essential! less temptation IFyou don't go anywhere you could buy anything!! I did my menu planning on Friday for all the way till the middle of next week. Only problems ith that is that I didn't stick to the plan on Saturday because it was beef stew and I didn't get going early enough so we had pasta with meatballs (kid tantrums really messed with my head too), and tonight's plan for pasta, leek, bacon and cream sauce is likely to get mucked up by the cook not being able to eat. I'm going to try though. I probably ate enough of my mum's roast dinner today to see me through till about Thursday mind you! so I'll list what I have and see if anyone else gets inspired: Tues - Thai green curry with rice It's not complete to the last detail and I flex a LOT but it gives me a jumping off place. I even made notes in my shopping list notebook, so hopefully I won't stand in a supermarket tomorrow or next week wondering what I need! Kerri. rub it inas if my mother wasn't enough... the kids had hash browns, breaded fish and tinned spaghetti, while I managed to slurp down spaghetti on toast. Actually it tasted wonderful because I'm starving and really struggling to eat anything, but I still don't need people to tell me all about their wretched pancakes! Kerri. Mardi GrasI was a dummy and should have made Cajun beans and rice for Mardi Gras, but I didn't think of it. We're having minestrone soup (leftover from a batch I made and froze) and spaghetti with tomato sauce, chicken, and corn. Last night we had black bean soup. BisquikAll I have to say about the Bisquik pancake mix we tried yesterday is yuck. Tonight? No idea. Possibly the ever popular sausage and lentil casserole again, though without apples as I've eaten them all but surelythat stuff is supposed to make up Maerican little spongey pancakes... the ones we call Scotch pancakes or griddle cakes. I didn't actually mean for you not to enjoy your pancakes. If you don't observe Lent (which I'm guessing you don't) you can always do it properly at the weekend. That was my original plan but DH won't be back so soon. We'll have them once he's back, since he's had more practice at not burning them! feeling better today - not perfect, but close enough to tackle what was on my meal plan. I bought some lovely looking pork loin chops (no bone), some medium new potatoes (I had tiny and I had baking potatoes, but I needed something in between for my slow pan-fried chicke stock taters) and I even saw a bottle of fancy Suffolk cider which I may add to my dinner or I may drink. I haven't been a huge fan of cider, but since it was sitting in an odd place I figured I was meant to try it (about $3 for a medium bottle). Some of us still have apples left to add to our dinner! Actually I've been mostly sharing them with the birds since they keep going soft before I get to them. So I buy cheaper apples and the birds get a feast! Kerri. LentNo, of course we don't do Lent! Just pancakes The Bisquik has instructions on the back for both American (Scotch) pancakes and English ones. Though what the point of the mix is I don't know, as I had to add egg, water and milk. What's in the box? Flour I suppose I recommend Aldi's maple Syrup, though Kerri - very yummy. Now I have to think of a way to use the rest of it up. I'm thinking ice cream... ![]() Given the choiceit's probably more fun to observe Mardi Gras than Lent! Actually, coming back from church today I realized that tonight's dinner--probably chicken pot pie--probably is not a good "fast" day meal. Ah well. I'm abstaining from Sudoku anyway. Also this week: maple syrupI've been picking up Rowse's organic maple syrup because it was the same price as Sansbury's own!! I think Lidl had it on offer but I never saw it - probably the dratted computer desk in my line of sight! I skipped the spinach but tonight's dinner was suspiciously like actual cooking. Pork loin chop (no bone), leek (St David's Day!), onion, apple, sauce made of chicken stock, apple juice and dry cider (and a bit of pork gravy granules to thicken a bit!) with my yummy chicken stock taters. The kids made it through a full size pork chop each, well as having seconds on the potatoes. I don't know where they put it all because if you saw them you'd swear I was starving them, they're that short! The potatoes I expected to be popular but the pork shocked me - normally they have trouble cutting or chewing big lumps of meat, but apparently Grandma's delicious roast dinners have been training them to appreciate the meatier things in life!! Kerri. food??I don't quite know how I did it, but I guess it was the gravy. I managed to eat sausages, mash and runner beans with gravy yesterday. This morning I've had a spoon of honey (which I HATE) just to shut y empty belly up because I can't swallow. Tonight's tortillas?? Too much hassle. Might do lentil, tomato and bacon soup - it doesn't need liquidising which is good since I don't currently own the equipment. I have some nice bread hanging around if it isn't green by then. And tomorrow we're going to my grandmother's. She decided she didn't fancy going out for lunch (she's never enjoyed eating much) so we'll spend the day with her, take a game or two and either she'll buy something for lunch today or I'll grab something on the way over. I'm getting antibiotics in a few hours so I expect to be able to eat! Honey - if you hear of a madwoman up north holding a doctor's clinic hostage you'll know the doctor disagreed with me about the antibiotics. Kerri. FridayCheese tortellini (sp?) Blessings, Dunno........can't think of anything I fancy for tonight's dinner. Maybe jacket potatoes with tuna, sweetcorn and mayonnaise. Last night was sandwiches as we had to go out at 5.30 and got home at 10. got the antibioticsthe kids had soup for dinner. DD has now christened it BLT soup - bacon, lentil and tomato. Mine's in the pot but I'm not gonna manage it tonight. eating with my grandmother tomorrow, assuming the antibiotics have made a start on me. Kerri. Good thing I've been keeping a food diary.... It appears we had hot dogs, baked beans, and macaroni and cheese. Tonight we're ordering pizza. BoringYesterday we had jacket potatoes. DS had chicken in white sauce with it (from a can more boringwe had my old lunchtime standby of 'eggy ketchup noodles' but I added bacon instead of sliced franks, since that's what the kids had for 'dinner' yesterday! But hey... at least I ate something, which is my first meal since Thursday dinner. Really not sure where tomorrow's going. See... this is what happens when I plan ahead! Kerri. Boringer and boringerMy cupboards are if not exactly bare, very boring. No fruit, no fresh veg, hardly any meat except a whole chicken that I keep forgetting to defrost. I have a lot of sausages though. Maybe sausages and onion gravy with rice? An aside, you all have got to try the Reynolds Slow Cooker liners - I have tried them twice. No cleanup for the crockpot!! They are well worth every penny. ![]() TonightTonight? Chicken fajitas (maybe on the grill) or pork tenderloin. We'll see what sounds good when I get home. I think the kids are more likely to eat the fajitas. OH! Fajitas.....I roasted a chicken yesterday and was planning (leftover) chicken enchiladas, here....I do have peppers and onions, though....fajitas, yum! I'm not sure if I have fajita marinade. If not, I may try your recipe. Just like it sounds, yep!Brown rice (cooked) tossed with as much salsa as is left in the jar and heated through! Blessings, I ate something!!my intravenous antibiotics seem to have helped a little because not only can I drink a whole glass of room temperature water I even managed to swallow tablets AND some shop bought lasagne. I cheated and grabbed the kids some easy dinner from the frozen food shop on the way back from the pharmacy. I bought things I've NEVER bought, including a box of lasagne. Actually it was quite tasty - don't wanna think too much about what went into it to get it tasty, but it was very okay. Also grabbed some yoghurts for pudding (and for me too!), some creme caramels and something I had VERY occasionally as a kid, not sure if you have it in the US - crispy pancakes. These are savoury filled things, and so small that if my kids don't finish the bigger sized box of 6 between them I'll be surprised. But if I haveto be in the hospital overnight tomorrow and DH is keeling over from jetlag at least the kids know where to point him for an easy dinner, if he doesn't feel like takeout! still, I ate something, and I think maybe the antibiotics are kicking properly this time, and the co-codamol is gonna make me not care really soon anyway! Very weird shopping experience you know... I cannot believe how many things come frozen these days, prepared in all kinds of mind-boggling ways and frozen ready for your convenience. A place like that really makes me think I've been on Mars for 10yrs! Kerri. ps. the fajitas sound good... I was planning tortillas for last week but that went up the swanny. Hot subs tonight...to finish up the bits of deli meat still in the 'fridge! I have mozzarella cheese to broil on them and fresh greens and a tomato, too. We'll probably just eat raw veges and applesauce for sides. Blessings, More food for me!we had the gammon, cauliflower in white sauce and potatoes I planned for Sunday but couldn't manage. The gammon was fabulous - tasty and really juicy (one orange and some peppercorns were this time's secret and I think it's a winner) - but the rest somehow fell a bit flat. I rushed it and tried to do cauli, pots and sauce all in one saucepan, so the cauli and pots were a little undercooked (esp. the potatoes!) and the white sauce wasn't as tasty as it should've been because I was being too cautious about salt since we had gammon. I did add some of the gammon liquid to it so it should've been good. It was a great meal on paper but maybe I've not been cooking fo a while. can't quite imagine grated carrot on a baked potato, not just plain like that. I'm a butter fiend around baked potatoes though, and no margarine cuts it in our house! need to replan the rest of the week now I can actually eat. Kerri. question for KerriI usually can translate pretty well, but I never was able to figure out what was the difference between gammon and just plain ham. Can you (or someone) explain please? We had pinto beans with some cut-up hot dogs and tortillas. Sopapillas for dessert. ummmm....well that's a doozy of a question Becky! I *think* that the gammon would describe what you might also call 'A' ham, ie. the solid lump of meat. Whereas ham over here also refers to the slices of reformed stuff that may not come off a whole piece of meat. What you probably call deli meats. It could of course be the particular cut of ham I suppose - packet stuff is often shoulder ham or leg ham and I guess gammon could be specific. I'll check into it a bit further, see if I can come up with something more scientific!! Either way, I have a 3kg lump of the stuff lined up for my mother's birthday party next weekend!! anybody got fabulous recipes for ham stock?? It tasted delicious but if I'm not careful I'll spend ages dithering and it will go off. I froze some, but a jug of stuff wouldn't fit, though I boiled it down some first. (One of the great joys of having "big kids" is being able to let them pick their own left-overs....DD11 comes up with some pretty scary combinations, though! Tonight-- stir-fried vegetables and pork with noodles. we had that a few days ago Becky!we ate at a great Portuguese restaurant chain called Nando's yesterday lunchtime, so I just fried up a couple of sausages for those who wanted them in the evening. The only bread we have is frozen! I defrosted some chicken pieces, so it'll be that tonight, plus maybe the spinach I have in the fridge. There's probably a whole meal in there somewhere, but I can't quite see it yet! I'm not so keen on Florentine spnach dishes with the spinach pureed to mush. I'm very Asian in my treatment of green veg, actually most veg really. need to plan some meals for the coming week, but I can't get my head around the fact that we might not even be home on Tuesday night. Back on trackI seem to have regained some enthusiasm for cooking and so last night we had Pakistani Kima (kind of ground beef curry, from the More With Less Cookbook), with hard boiled eggs chopped on top and basmati rice. There's a little kima left, so we'll have that tonight. I'm also making Singapore Laksa, which is a chicken curry dish. I think I have some noodles to have with it. I don't have much suitable veg to go with it - maybe slices of cucumber. I wish I had some beansprouts. I have a chicken in the freezer that I keep forgetting to defrost. If I remember to to take it out, we'll have that tomorrow. Traditional English roast dinner with yorkshire pudding, roast potatoes, carrots, parsnips, and gravy. ![]() Yum Becky. We're having crockpot country style ribs, garlic smashed potatoes, and green beans. ribs sound good Andrea!I've never done ribs at home and it's ages since I've had them in a restaurant - they sound yummy!! we ate out (again!) tonight... we stayed later than planned at my parents' house because of an extended visit to my grandmother and the end of an Errol Flynn movie (!) so we popped into a pub on the way home. We skipped dessert for a change. DH had a lovely beef fillet with red wine sauce and I made the mistake of having a burrito and not thinking to ask if they could keep out the bell peppers. I had a whole side plate full of them by the time I was done. The rest was lovely, but those things taste strong and if you don't like them you gotta pick them out. Lesson learned. Tomorrow the kids are eating at my parents' house because they're staying overnight, so I'm not sure what we'll be having, except we have got to eat up, or at least cook up the diced chicken I took out of the freezer. The night after that we'll have to grab something in London before we leave so I'm trying to plan the rest of the week out, or we'll end up eating out again soon enough. My mother's birthday party on Saturday night so something simple on Friday night and probably Sunday night too. DH is already flying off again Saturday. meals and the life story comes free! Usually when I think bell peppers, I think fajitas, not burritos. ![]() Yeah, me too Becky.Yeah, me too Becky. Ribs are easy Kerri I do them normally with a homemade sauce, which is easy. Tonight I opted for the bottle of sauce - even easier!! I like to bake them at a low temp for 3 hours or in the crockpot. They are in the crock tonite - with mty Reynolds liner of course! The rest of the week looks like this: peanut coated chicken (Thai) Tomorrow we are going to the Maple Tree Inn, which is 40 minutes from here. They are open a couple months of the year and serve pancakes with real maple syrup that they make right there. You can get bacon, sausage, ham, etc. too. It is out in the sticks but the syrup is delish! We are going with friends so should be fun. It is the first sign of spring for me! I can't stick to a planso last night we ended up after all with and I didn't remember to defrost the chicken, so it's thinking cap time for tonight's dinner... Not even a planis going to help us this week....unless it is a "plan not to plan!" We have something to do and/or someplace to be every evening this week (with two on Tuesday!) I've stocked up on sliced meats, cheeses, and fresh fruits & veges. There is also a pretty good selection of soup in the pantry. It's "serve-yourself-or-starve-week" at our house! I've actually cooked a virtually frozen chicken once though with surprisingly good results. I cooked it on a slightly lower heat I think, perhaps towards the end. Not something I'd recommend especially but it is doable, and as long as it's cooked it should safe because it doesn't sit at the wrong temperature at any point! Kerri. no goodI am busy and out of the house every day from Tuesday until Sunday, and I don't do big roast dinners unless I'm in all day. I can't be doing with all that prep and clear up after a day out of the house. We'll have to have it Sunday. Don't much fancy cooking one from frozen, though I'll take your word for it that it works I still don't know what we're having tonight, though I have some cooked chicken in the fridge. I don't fancy that much, DS can have it. I might have a pie with baked beans new to the groupHi. I just signed up yesterday and have been exploring the site. I'm very impressed that you all actually do meal planning, or at least try. I've never mastered it. There's just the two of us at home now (empty nesters), so if DH comes home and isn't hungry, dinner goes to waste. (And he hates leftovers!) It's very demotivating where meal planning is concerned. So, instead, I call him in the morning to tell him if I'm cooking something involved, to make sure he's prepared (not full!) Or, to ask him if he's going to feel like a full dinner, or not. So, I guess in an odd way that is meal planning, but not as well done as you ladies. On the upside, he's not demanding about dinner and is just as happy with a peanut butter sandwich as he is a big meal. So, there's my introduction for you about our disfunctional eating habits! Me - organized???I think not, but I'll take whatever compliments cme to hand!! the meal planning is my second attempt. I failed badly last year because of Cinese New Year getting in the way. Also veggies of some kind and probably gravy. leftover mashgrate some cheese on top if you have some, then grill it. It was hard work when I was laughing so hard though!! I prefer to be organised because I have such a dreadful memory that I end up with chaos if I just let everything slide, and that makes me irritable. Ergo, I aim for greater levels of organisation on whatever I think can be controlled. Some days and weeks are better than others - you may have caught me on a roll. Another week I had two whole weeks of meal planning but everyone got sick so nobody ate anything that was planned. That's why I keep it flexible. Starting to think about dinner at 5pm for 6pm drives me crazy and my mind goes blank, which is why the meal planning is such a great idea when I can get it going. right now I have nothing, except that we have to eat up some sausages out of the fridge! That narrows it down to either sausages with gravy, potatoes and maybe broccoli, or else cassoulet. It's bitterly cold outside so I think the cassoulet will win. Yesterday we had a late lunch at McDonald's and were not very hungry for dinner, so I just made us a package of ramen with some green beans for supper. Leftover mashI dolloped it onto a baking tray with an ice cream scoop and baked it. We had good old sausage, lentil, apple and onion thingy again. There were only three sausages in the freezer, so DS had those and I had the pie. We both had lentils, apple and onions. We have been out all day today, arriving home with DS' friend and girlfriend, so I made the one dinner I know his friends will BOTH eat - pizza. With onion rings and garlic bread. I'm waiting for St George's Day myself DS14, his friend and his girlfriend have been to IckDonalds about 3pm this afternoon, so I'm not sure if they're going to be hungry enough to eat a big dinner this evening. I made myself an omelette about 5pm. Maybe I'll do sandwiches or something for the kids later. I was talking to an Irish-Catholic friend tonite and she said they couldnd't have their corned beef and cabbage so they wre having cheese pizza instead (because of Lent) and the trad. lamb stew on Sunday. But then DH said that he heard Catholics got a special dispensation?? Anyway, we had the pork chops with sage and tomatoes (finally), white rice, steamed green beans with carrots, and a mixed green salad. And a nice California cabernet. Yum. Even better, DH made it! Tomorrow we are going out - yay! delayed St. Patrick's DayWe originally were going to do the corned beef thing. Then DH got his first-ever royalty check in the mail, for a violin sonata he had published last year. So we set aside as much as the taxes would be, and ordered pizza with the rest to celebrate. It wasn't that big of a check. But still! Royalties! Friday and SaturdayI had a cheese and mushroom omelette last night, DS14 and his girlfriend had sandwiches (they'd eaten at McDonalds late afternoon and weren't very hungry). Tonight we had tuna and pasta, with sweetcorn and peas. Crushed potato chips and grated cheese melted on top. Oh, and garlic bread. buffetwe had salads, quiches, ham, that kind fo thing at Mum's today and some divine desserts - I only had three out of five, which really was very good of me. Actually no, the fourth was a fairly ordinary out-of-season fruit salad and the fifth was blackforest gateau which I developed a hatred for as a child because I associate it with my grandmother and birthdays! Really, really good ones are few and far between. for tomorrow I have a lump of sausagemeat and egg pie, a tub of coleslaw and a couple of dips all stolen from the buffet and I'm planning soup with the fresh stock water from the ham. I put the whole stockpot out in the garage this time because my usual jug still contains the unused stock from last time!!! that should cover most eventualities since it's just me and the kids again. Kerri. You skipped the fruit salad?!!Fruit salad is my absolute bestest favourite dessert! Better than all those cakey things - I hate gateaux, and don't even mention trifle or blancmange DS14 and girlfriend are at a 16th birthday party. They went off at 10.30am and I don't know what time they'll be back, early evening I expect. I don't know what to make for dinner as they will quite likely stuff themselves with goodies and cake. I had planned a roast chicken dinner today, but I really don't think they will be hungry enough for that. And all I am fancying now is fresh fruit salad! I think notthis was not Mum's best ever fruit salad. I saw canned peach which I'm not wild for and lots of pale things which were probably apple. This wasn't gushing with strawberries, kiwi and melon!! the others were banoffee pie (my cousin's signature dessert!), a very boozy trifle and my mum's pavlova which WAS filled with kiwi and strawberries! And cream... The fruit salad just wasn't going to have a chance! the sausagemeat and egg pie thing we've just had for lunch (with coleslaw and herbed red leicester cheese) was very tasty.
