Aaaahhh...Pieroga!

Today we made Polish Pierogies, only with a wheat free dough. The dough was quite tolerable, I'm happy to say. For those unlucky enough not know what a pierogie is (pronounced peah-r-ah-gee and you roll the "r") it's like a Polish ravioli type thing. They're yummy and for DH, without them, it's not really Christmas. I hear they do them in Russia too, but I wouldn't know.

If you've ever tasted a meal cooked by a Pollack, you'll know that they give the Italians a run for their money. I love Polish cooks and Polish cooking. Which I'd know next to nothing about if I hadn't married a fellah of Polish/Slovak descent.

So the day before Christmas, DH says he'd like Homemade Polish Sausage and Pierogies for Christmas dinner. Folks, this is NOT enough advance notice. Making sausage takes most of an afternoon and Pierogies are almost a two day undertaking. Not to mention having to go marketing for the ingredients beforehand.

So after Christmas DH got his Grandma's and Mother's recipes for the dough and fillings and we made up almost eight dozen pierogies. And we still have filling left over. We made four fillings: sauerkraut, mushrooms, cheese, and cherry. We had pierogies and a fruit salad for dinner. Tasty!

We'll have to make up some more dough tomorrow and do the rest of them. We're freezing some, eating the rest! I'll Post the recipes within the next day or two, we're still tweaking the dough recipe.

You wouldn't be, shmaybe, thinkin of bringin some of them pierogies in this direction, would ya?

Or at least share the wheat-free dough recipe? Eye-wink

Wow, I'm impressed. I made them for Christmas eve (DH is Polish too) and took the lazy way out with spring roll wrappers, since neither of us is sensitive to wheat. Although, I'm thinking you might be able to get rice roll wrappers at an Asian market and double them up. Also I bought the kielbasa for Christmas Day. I still have the rest of the wrappers in the fridge-- think I might make some actual spring rolls with those.

With onion powder. Sometimes (not that I do it often anyway) I omit the cheese.

DH would have preferred that I make the wrappers myself, but it was that or nothing. He was lucky that I didn't buy the frozen ones.

My mother is Slovak and makes them homemade. She fills them with potatoes and cheese and we eat them in butter with browned onions. I have never made them, but even the frozen kind will quench my craving!

Using wonton or other ready made wrappers and got an astonished/affronted glare. So no rice roll wrappers anytime soon. What filling do you use?
