Dinner from my garden!

So I'm at the end of my planned-and-bought meals (and then some, really), and my husband is already saying "I'm hungry!" which means I need to think quick. I had one meal left to make, but I didn't think he'd like it very much since he's not too fond of fish. In my garden, however, I found three heads of broccoli, a couple of handfuls of ripe and delicious Sweet 100 cherry tomatoes, and more big fat cucumbers than I know what to do with (I brought in 6, and there are more out there!) Other than the spinach we had last month, these are the first veggies of the season. We had cucumber-and-tomato salad and a kind of pan casserole of brown rice, steamed broccoli, cheddar cheese, and (canned) tomatoes. So good! Nothing like vegetables fresh from the garden! Especially when I grew them. Eye-wink

Such a good feeling!

We just have little bits of veg in pots, grow bags and one raised bed. So at the moment it's more of a garnish than a whole meal opportunity. You sound like your vegetable garden is about to feed you in a serious way. Fabulous!

Squash

I have squash coming out of my ears!! And I don't know what to do with them all because my hubby will only eat it fried. Trying new things, but he is resistant to change...

I had to replant other things, but there are a few small tomatoes out there on my roma plant.

Congrats on your green thumb. I'm ashamed to say mine is brown, except when it comes to squash. Even a black thumb can grow squash!!

Don't have room for a garden and probably wouldn't have the know how if I did. I do however have some beautiful roses; pink, red, yellow, and every once in a while a lavender one. Smiling

Enjoying a salad from my garden at this very moment

Well, the cucumbers are from Sam's Club, but the lettuce is mine!
There are blossoms on the cucumbers, zucchini, and pumpkin vines. The roma tomatoes are starting to bear fruit, and the corn is looking pretty healthy too.
Jenny, what kind of squash are you growing?
I heard a joke a few years ago which is (perhaps) suitable for this thread.
Question: Why do you have to lock your car doors in (insert town here) in July?
Answer: So that your neighbours don't try pawning off their extra zucchini on you!

Zucchini, gardening, maybe canning

Hee hee! Smiling No zucchini in my garden this year (my husband hates squash), but my parents used to grow it when I was little. Zucchini the length of my arm, and lots of it! My mother used to put it in a zucchini casserole that we all loved. I think it had zucchini, tomatoes, and Velveeta cheese, and I'm not sure what else. We ate a lot of it. Smiling

I'm absolutely delighted with the way my garden is doing this year. When we lived in apartments we had tomatoes in pots, but this is much better. Last year all the cucumbers and cantaloupe died, but this year they're taking over! Everywhere I look I find cucumber vines--they're climbing the tomato cages and the fence! I added some compost, composted manure, and sand to our heavy clay soil in spring and really worked it over to loosen it up, and I think it helped a lot. The broccoli was an experiment this year, as was the spinach. Both were successful--in fact, I think I'm going to want more broccoli plants next year, and maybe some cauliflower. I'd really like some corn, too, but I just haven't got room. Hmm, maybe I need to expand for next year. I could go about 6 feet in each direction and double my garden's width (it's 12' x 15' right now). We'll see! I think it would be great if my garden could supply most of my produce through the summer. I've considered joining a CSA, but I don't think that makes sense when I'm already growing this much. If I didn't or couldn't have a garden I'd probably do it.

Jamielea's roses remind me I need to plant the one I bought--need to find a sunny spot for it in my largely shady backyard. I don't really know much about roses--maybe I'll be asking for advice! Eye-wink

I think my challenge is going to be finding uses for all these cucumbers! Lots of Greek salads, definitely, especially when more of my tomatoes are ripe. Maybe gazpacho then, too. And I found a recipe for a cucumber and pineapple salad that I think I'll try. I'm not too fond of pickles, but I am intrigued by canning. Every summer I think about it but I've never actually tried it. My mom gave me a big pressure cooker a couple of years ago--I wonder if I could use it for that?

more squash

it's just straighneck summer squash. Every year, I say I'm not going to plant much, but always end up doing a whole row. I've also planted a winter variety, Spaghetti squash. I actually planted it for my MIL. She decided not to do a garden this year (since between the crows, bunnies and pheasants, and 2 family reunions she has to host, she decided not this year).

Love the joke about why to lock the cars!! LOL! About how we are, too. Better lock 'em or I'll come around!! FIL took tons of squash last year to the ladies at the bank at least once a week. One day, the drive thru teller caught him and told him to come by the drive-thru FIRST sometime so she could get some!

Wow, your garden is much farther along than mine...

My tomatoes have just recently set fruit and aren't anywhere near ripe yet. And the green peppers are just standing there, not growing. It's been a cool spring and summer so far here so I think the plants aren't growing like they would if it were warmer.

And my pumpkin seeds never sprounted in the hills I planted. Very dissapointed--I was looking forward to canning pumpkin pie filling this autumn.

The grapes and the raspberries are the only thing in the garden that are at all robust this year.

Glad someone's garden is thriving!

Canning Pumpkin Pie Filling

I noticed your comment about canning pumpkin pie filling when I Googled "Canning pumpkin pie filling". I found a great recipe for pumpkin pie from scratch and my family all loves it so I was going to can the pie filling for Christmas gifts. I have never canned before although I know the basic how-to's. I didn't know if there are any special considerations to canning this particular item. If you can please clue me in that would be fantastic! Thank you so much.

We've had a hot summer

Yeah, we heated up after the first week of June or so and the garden seemed to appreciate it, especially the tomatoes. The cucumbers are amazing me--they're engulfing everything! Last year I planted the same number and got one cucumber before they all died. Sorry to hear your pumpkins never sprouted! That's really a shame. Sad

Zucchini

Have you guys ever made bread with grated zucchini in it? I peel it so my DS4 doesn't detect "sumpin' green". I can post a recipe if anyone is interested.

My mom sautees sliced summer squash in oil, with quite a bit of salt and pepper. It's not battered and fried, but it is tasty!

DS4 and I are going to plant a little garden next to the back driveway this week. We're going to put in some herbs, and late season veggies. Should be fun!!

Zucchini Bread

Is a great August tradition in these parts (NE Ohio.) I think just about any carrot cake/bread recipe can be made with zucchini. I've grated them well and tossed in spaghetti sauce when my kiddos were activly refusing to eat "chunks" of veges. Eye-wink

Next year

I'm still in the planning stages for my garden so far (haven't even got the dratted mortgage finalised STILL) but I'm enjoying my mum's produce and her neighbours' who are on holiday!! Lots of cucumber here from over the road, but in Mum's garden it's only the greenhouse tomatoes and chilis that are really ready. The cucumbers are starting up. I have a greenhouse in my new house if we ever get it, and it has a specially designed auto watering system to use with growbags, so that'll be something to look forward to.

Other than that I'm planning herbs, lavender and low maintenance, kid-proof all-round colour. By the time I get started it'll be nearly Autumn so I'll be moving fast if I want colour in Spring.

Next year I'll really be up and running with you though! Smiling So exciting!

Gardening and Planting

It is so hot here in Ontario, everything is burning up this year. We did get in our garden though. We have some peppers, tomatoes, beans, and cherry tomatoes. I also planted some carrots and peas. However the peas are not taking yet. We do have peppers and tomatoes coming though. We spend alot of time outdoors in summer. I also planted a scenic little garden. I added a little white bench with candles and flowers.
I have been getting rave reviews....lol.

I planted

I planted zucchini for the first time this summer, and my plant has lots of blossoms, but no sign of any squash yet. I thought it should be starting by now? I have lots of tomatoes on the vines and I have a grape tomato vine this year. The radishes didn't do anything except grow leaves:) I have 2 eggplant plants and a nice size eggplant is growing! Having a garden is so satisfying. I like walking out there and just looking at it:)
