Eton Mess

Instructions
Eton Mess is a glorious mixture of meringue, fruit and whipped cream that is traditionally served at Eton College.
First the day before you want to eat the Mess, make your meringue. Or, if you're not a making meringue type of person, purchase your ready made meringue. But it really is very straight-forward to do. Preheat the oven to Gas Mark 2/150C
Prepare a baking sheet by lining with greaseproof paper/baking parchment and oiling it with a flavourless oil.
Beat the egg whites unil they are stiff. The way I tell if they are ready is if I can turn the bowl upside down and the egg whites don't slip out. Be cautious with this test!
As you continue to beat add in the caster sugar a dessert-spoon at a time, until it's all beaten in.
Place dollops of about a tablespoonfull of the meringue mixture all over the baking sheet. Put into the oven and at once turn the heat down to Gas Mark 1/140C. Cook for one hour, then turn the oven off and leave the meringue in overnight to finish drying out.
The next day wash, hull, and chop your strawberries into bite size chunks.
Break the meringue dollops into bite size chunks.
Whip the cream until it is in soft peaks.
Fold the meringue and strawberry pieces.
Eat and enjoy!

I have to translate this recipe, even though anyone could just by googling:
Caster sugar=superfine sugar (supermarkets sell the Domino brand of this in 1-pound boxes)
Double cream=heavy cream
150C=300F
140C=285F

I made this up for our Women's Fellowship meeting today and it was a BIG hit, Zilla! There were about 11 ladies so I doubled the recipe and it was almost all gone by the end of lunch. Rave reviews! No one had tasted anything like it before. Light, crunchy, sweet but not overly so...it's yuuuumy. I thought you should know how much the recipe was appreciated across the pond.
