Whole-Wheat Banana Bread recipe
Okay, here it is!
Moist ingredients:
3 large (or 4 small) bananas, very ripe and soft
1 1/2 tsp vanilla extract
1 large egg, lightly beaten
1/2 cup molasses (or honey, or a combination--the molasses makes it darker and more, well, molasses-y, while the honey makes it lighter and sweeter. I sometimes use 1/4 cup of each)
1/4 cup canola oil
Dry ingredients:
1 1/2 cups whole wheat flour
1 Tbsp baking powder
1/2 tsp salt
1/2 cup chopped nuts (either pecans or walnuts are good)
(You could also put in raisins or other dried fruit if you like it)
Mash up the bananas, then add the rest of the moist ingredients and mix more-or-less smooth with a hand mixer.
Combine the dry ingredients in a separate bowl and mix well so that baking powder and salt are evenly distributed.
Add moist ingredients to dry ingredients and fold together lightly by hand, just until dry ingredients are moistened. Don't overmix.
Spray a loaf pan with cooking spray and wipe it out, so you get only the thinnest film. Pour in the batter and let it "rest" for about 15 minutes before putting it in the oven.
Bake at 350 degrees for about 45-50 minutes. When it's done, a toothpick inserted in the center will come out clean.

I know this was submitted
I know this was submitted years ago, but it looked like a wonderful recipe - whole wheat, oil instead of butter, and honey instead of refined sugar! I tried it and it came out looking great, but tasted like baking powder - yuck! I am thinking surely the 1 Tbsp of baking powder is a typo. Most other banana bread recipes use only 1 tsp of baking powder or soda.

I tried this recipe yesterday with 1 tsp baking powder and that worked. A nice moist loaf - very tasty! I had to bake mine for more like 70 min.
you may very well be right
I haven't tried the recipe myself--we can't eat wheat, and our spelt recipe is in the box. Why don't you try it with the 1 tsp and report back! We'd love to know and then I can correct the recipe. Thanks!
