Roasted Chicken and Potatoes

Ingredients
- 6 boneless, skinless chicken breast halves
- 1 c. mayonnaise
- 3 tbl. dijon mustard
- 1 lb. small red potatoes
- Salt and pepper to taste
- 2 clove garlic (or 2 tsp. jarred minced garlic)

Instructions
Preheat oven to 350 degrees. In a large bowl, whisk together mayo and dijon mustard. Cut chicken breast halves into half again. Quarter potatoes. Toss chicken and potatoes in mayo mixture. Dump into a greased 9x13 pyrex dish or pan and salt and pepper to taste. Sprinkle with garlic. Bake 30-35 minutes.
Notes
This was delicious! My husband commented they were the best potatoes he had ever had and the chicken was flavorful all the way through.
