Cheddar-Artichoke Brunch Casserole

Description
Ingredients
- 4 eggs
- 1 t. salt
- dash pepper
- dash Tabasco/hot sauce
- 6 soda crackers (crushed) or 1/4 c.bread crumbs (best if toasted)
- 8 oz. shredded cheddar cheese
- 2 oz jars marinated artichokes, drained (reserve oil!) and chopped
- 3 green onions, chopped
- 1 clove garlic, crushed
- 1 T. parsley

Notes
I like to double the recipe and pour into 1 8x8 pan and 1 13x9 pan. I have used canned artichokes marinated overnight with success when I could not find enough marinated artichokes.
This is great for a brunch buffet when you don't want another bread item. Kids like it too!
