i need help with a home canned sphagetti sauce recipe

I was wondering if anybody has a recipe for canned sphagetti sauce. with the vegtables in it. I would be so thankful

I freeze, don't can

I've never tried canning with tomato based stuff. I just freeze it in quart or gallon sized ziplock baggies. Here is my recipe:

1 to 1½ pounds of ground beef
½ onion, chopped
1 can of diced tomatoes
1 can tomato paste
1 can tomato sauce
1 bell pepper, chopped
Italian seasoning, oregano, salt and pepper (to taste)
Brown beef with onion til well cooked. Drain. Add other ingredients and simmer for 15-20 minutes, stirring occasionally.

This is the recipe I use for speghetti and lasagna. I usually make a big batch of it and freeze it in meal size portions. You can add some carrots and/or whatever other veggies you want in it, too.

Here's a recipe

When you start talking about putting vegetables into the tomato sauce then you start talking pressure canning. Here's one recipe I found that calls for that. NEVER MESS WITH A CANNING RECIPE. Don't change ingredients! You can end up poisoning your family. I don't mean to scare anyone, except I kinda do. Evil

This is why I freeze instead of can. I mess with recipies as I go along and seldom measure. I just hate to take the chance. Besides, I have plenty of freezer space.

That happens around here every other year or so for at least a little while and sometimes for the better part of a day. I wouldn't be surprised if you, knowing you, have a backup generator an' a tank of diesel, but some folks don't! Smiling

It's always good to be able to do either; it is possible to get too dependent on the freezer and lose all of your hard work and food storage in a bad storm--not because a tornado carried off the chest freezer, but because a tree downed a power line somewhere.

You got it!!

There is a generator in the camper if I need it (can just plug anything in with an extension cord), and I have an 8,000 gallon diesel tank, and have a 250 gallon tank ready for gas (the generator is gas, not deisel). But as long as you don't open it, a power outage shouldn't hurt it for long. We usually don't lose power for long, couple hours or so.

But I have to laugh at the thought of a tree downing a power line here. You've never seen our treeless Llano Estacado (high plains), have you? LOL!
