Mustard and Lime Roasted Chicken

Ingredients
- 6 free range chicken breasts
- 1 c Dijon mustard
- 1 c fresh lime juice
- 2 T extra virgin olive oil
- 6 free range chicken breasts
- 1 c Dijon mustard
- 1 c fresh lime juice
- 2 T extra virgin olive oil
Instructions
Mix all ingredients until well combined in a large bowl. Cover and place in the fridge for an hour. Place the chicken on a baking tray and roast in a 200 C (390 F) oven for 35-40 minutes, or until cooked through. Brush with any of the remaining marinade once during the cooking. Once out of the oven, cover and allow to rest for 5 minutes. Serve with roasted potatoes and a green salad.
