Ingredients

  • About 2 cups leftover cooked rice
  • 1 large onion, chopped
  • 1 zucchini, carrot or potato, grated
  • Leftover cooked fish, like salmon (canned will do in a pinch)
  • 2 large eggs (3 medium)
  • 1 c flour
  • 1 tsp Spike
  • 2 T butter
  • 2 T Olive oil
  • About 2 cups leftover cooked rice

  • 1 c flour
  • 1 tsp Spike
  • 2 T butter
  • 2 T Olive oil

Instructions

Combine all the ingredients except the butter and olive oil in a bowl. If the mixture is a little dry, add an egg; if it's a little wet, add more flour. Heat the olive oil and butter in a large frying pan. Make the mixture into patties and fry til brown on both sides. Serve with sour cream or yogurt.

Notes

You can use any kind of cooked grain, really. Think of this as a rice latke.

Seriously, you gotta post that version of this recipe here. Including your recipe for dirty rice and egg fried rice that you combined with the eggs. I'm not kidding folks, her Dirty Rice/Chinese Latkes are ambrosia. DH would go batty over those.
