Crispy Spinach

Description
A quick and tasty Indian way with spinach
Ingredients
| 1⁄2 | lb | fresh spinach leaves, washed |
| 1 | t | mustard seeds |
| 1 | t | cumin seeds |
| 2 | T | flour |
| 1 | t | turmeric powder |
| 2 | t | chili powder |
| 2 | T | oil |
| 2 | green chiles | |
| 2 | t | salt |
| 1 | spring of cilantro, chopped |
Instructions
Make a paste of flour with twice the amount of water and add mustard and cumin seeds, turmeric and chili powders, green chillies, coriander/cilantro and salt. Take 2-3 spinach leaves at a time, lightly coat with the batter, and keep aside. Heat oil in a frying pan and fry the spinach leaves coated with batter until crisp. Serve hot with tomato sauce. (Hint: use a lid to reduce splatter).
