Crispy Spinach

Description
A quick and tasty Indian way with spinach
Ingredients
- 1⁄2 lb fresh spinach leaves, washed
- 1 t mustard seeds
- 1 t cumin seeds
- 2 T flour
- 1 t turmeric powder
- 2 t chili powder
- 2 T oil
- 2 green chiles
- 2 t salt
- 1 spring of cilantro, chopped
Instructions
Make a paste of flour with twice the amount of water and add mustard and cumin seeds, turmeric and chili powders, green chillies, coriander/cilantro and salt. Take 2-3 spinach leaves at a time, lightly coat with the batter, and keep aside. Heat oil in a frying pan and fry the spinach leaves coated with batter until crisp. Serve hot with tomato sauce. (Hint: use a lid to reduce splatter).
