Spelt
Hello, I have used spelt in place wheat flour to make anything from tortillas, bread, waffles, cakes etc. Because of a high amount of wheat used in our country, many people have developed allergies to it. Many of the children who have ADD, ADHD and Autism or other allergies are affected by the high glutten of wheat. Spelt can help replace the wheat. You can purchase it in white or whole. It is rather expensive, but worth it if it helps your child. I've had to experiment some with how much to use--but if using the white spelt, it's pretty much the same amount as wheat flour in the recipe. We have found spelt at the healthfood store and at some Amish stores.
