Whew!!
I just finished manning a booth at a food storage fair. Talk about a blast! I set up a display on grinding grains and beans, made some FAST bean dip from fresh bean flour, and some yummy corn bread (I grind popcorn to make mine, it's soooo good.) Anyhow, it was great to show people what really is in a whole grain, and how much of the vitamins and minerals they don't get if they buy pre-ground. All the vitamin rich oils are removed from the flour, so it doesn't go rancid, even if you buy "whole-wheat" flour, there's no germ in it. I talked to one mother (of 5) and she says that they only spend about $90 a year on grains because of bulk buying and making their own breads, and we both figured we paid for our grinders within a year, and then saved at least $300/year on baked goods, not considering the health benefits. Wow. Never really thought it out like that. It helps that we can get wheat berries for 20 cents a pound through our church's storehouse when we buy at least 25 lbs at a time. Exciting.
There were other fun booths. One was on freezing your veggie crop rather than canning, another on dehydrating, one on making the perfect whole wheat bread...I'll share the recipe after I attempt it, but she had samples and it was great! OK, off to bed, but I'm excited to do a little more whole food cooking this week...maybe make a bean soup or something. Especially with this cold weather.
