A quick and tasty Indian way with spinach

Ingredients

  • 1⁄2lb fresh spinach leaves, washed
  • 1t mustard seeds
  • 1t cumin seeds
  • 2T flour
  • 1t turmeric powder
  • 2t chili powder
  • 2T oil
  • 2 green chiles
  • 2t salt
  • 1 spring of cilantro, chopped

Instructions

Make a paste of flour with twice the amount of water and add mustard and cumin seeds, turmeric and chili powders, green chillies, coriander/cilantro and salt. Take 2-3 spinach leaves at a time, lightly coat with the batter, and keep aside. Heat oil in a frying pan and fry the spinach leaves coated with batter until crisp. Serve hot with tomato sauce.
