My experience
Maybe it's my recipe, but when I do 2 pies at a time it takes much much longer. As long as you cover the crust with foil at a certain point to avoid overbrowning, that doesn't matter. Just be sure you allow yourself extra time -- I've stayed up very late and had to wait on other cooking because I didn't plan on the extra time!
