I would use a bag that "breathes"
and store it with cedar or lavendar or something to keep the moths out, of course.
I'm assuming the fleece is nicely combed/carded and ready to play with. If it still looks like it's still "in the lock" you'll have to card it for some of the following crafts.
In addition to the dying, or needle felting that Lynn mentioned, you can use the fluffy stuff for things like wet felting into beads or balls, wool angels, beards and hair of little dolls, or go completely nuts with a felted bar of soap. Wheeee!
