However, I just wanted to note that the egg substitution in the Banana Muffins recipe does contain corn (baking powder is made with corn starch). Also, if the author knows of any substitutions or exchanges for potato starch, that would be helpful, since there are many people who have an allergy and sensitivity to potatoes.
