Ingredients

  • 4 oz oat flakes (quick cooking or instant work fine)
  • 3 oz raisins (or chocolate chips if preferred)
  • 3 oz butter/marg
  • 1 1⁄2 oz brown sugar
  • 1 oz granulated sugar
  • 1 small beaten egg
  • 1 tbsp water
  • 1 tsp vanilla extract
  • 1 1⁄2 oz plain (wholemeal) flour
  • 1 tsp cinnamon or mixed spice
  • pinch of salt
  • 1⁄4 tsp bicarbonate of soda

Instructions

Oven: 375F-400F

Cream butter and sugars. Beat in egg, add water and vanilla. Sift together flour, spice, salt and bicarbonate of soda, and add to egg mixture. Stir in oats and raisins - adjust oats until the mixture is firm enough to roll into balls. Put walnut-size balls of the mixture on baking sheets - well spaced because they spread - and bake for about 15mins. Don't just leave them to go cold - eat some fresh and warm!!! Store in an airtight container.
