Best darn recipe for refried beans north of the Border
I love every recipe I've tried from this cookbook. If you're a fan of Tex or Cali Mex, or of the restaurants Chevy's or Rio Bravo (yes to all for me) and you like cooking from scratch, you must try this cookbook. The slogan is, "no cans in our kitchen!"
Recipes for making homemade torillas, homemade salsas, sauces, marinades, seasoning mixes (their Fuego Mix is outrageously good), main dishes, and other recipes are delicious. I love their fajita recipe, and as the title of this post mentions, their refried bean recipe is out of the world. The trick to homemade refried beans is shortening. I use the Earth Balance shortening that doesn't have the nasty stuff in it.
For some recipes it takes a little more time to make the mixes or marinades yourself before you start making the meal, but the taste is incredible and worth the extra effort. And you know every ingredient in the dish and they're all good for you.
